    Personally I think that they would be OK but it depends on what kind of cookies you are making, sometimes the other incredients (chocolate chips, oatmeal, coconut) can cover for the vanilla.

    You should try brushing your bread with butter instead of an egg wash, I find that this browns the crust much better then eggs or cranking up the heat. Hope it works! -Thyme
