I don't use lettuce wedges often I tend to forget that they are crunchy cold and so good When I make them I use a cucumber dressing that I love.This makes about1-1/2 cups I do it ahead and let it ripen for about 6 hrs.to 1/2 a grated and drained onion, 2 cucumbers peeled and shredded then drained add ! tabl red wine vingar, 2 tea fresh chopped parsley 1 crushed clove of garlic salt 1, tea. sugar or honey to sweeten pepper to taste.Pour over lettuce wedge, If you don't like iceberg and combination of greens will work.
