When we raised the kids on the farm, we used everything from the butchered animals. Pickled pig feet, souse, marrow soup, heart, liver, gizzards, chittlings, etc. but now if I don't know someone who is butchering one of their animals, you cannot get any of these in the store. Do you know you can't even buy bones at the butcher to make soup! What's this world coming to?

I hear ya. As recent as 10 years ago, I was able to get chicken necks and backs in packages at the supermarket for making broth and they were plentiful. You can't find these anywhere anymore and I'm wondering why. If I go to the Asian market in my area, I can get all kinds of "offal" for soup making but that's a 20 mile round trip.
