Mexican tonight. Quesadillas made with chorizo, onions, poblano peppers, garlic and muenster cheese. Corn salad/salsa with lightly charred corn, jalapenos, red bell, red onion, garlic, cilantro, lime juice, and queso fresco. And, of course, guacamole.

I based the dinner tonight on this recipe, although I made several changes, like adding a tablespoon of Herbs de Provence to the sauce, and using veggies I had on hand like fresh asparagus. It was all cooked to just crisp tender along with small pasta and well worth doing again. Yummy...

We worked our way up to a favorite restaurant/bar at Matlacha Pass, a one hour drive if we go straight through. Made a few stops, though. For a starter, we shared hand pounded, breaded, and fried conch, followed by grilled shrimp with a lemon caper sauce, yellow rice, and steamed broccoli for me, while Himself had grilled pompano, coleslaw, and French fries. He also brought a slice of Key lime pie for a bedtime snack - and my hubby isn't a dessert eater normally. Guess he really likes Key lime pie,,,

Tonight I made my 1st attempt at chicken rice. Out of all of my 1st time dishes I was nervous about this the most...
Cooked some chorizo, onions, and pickles as a side dish.
