Pesto,Tomato,Onion Salad
Wedge 4-5 large tomatoes and place on a platter. Top with one med thinly sliced red onion,In your f/p put about 3/4c. evoo, 3 tab. balsamic or red wine vinegar,salt and fresh ground black pepper to taste,1 c. fresh basil,4-5 cloves garlic Pulse til smooth and pour over tomatoes and onions, then shave some parmesan over the top. Great with room temp or hot buttered pasta and warm garlic cheese bread.

K's recipe works well with most any red tomato, even without the onion and with a small quantity of sugar.
