Tapas style party for 90 people

Hi all!
We had a destination wedding in Mexico and are now planing a semi-formal party next month to celebrate. We want to do more of a tapas style food. (Smaller portions but with variety.) It needs to equate to a full dinner so no one is hungry.

Below you can see what we have planned so far. I am in no way a party planner so I would love some feedback on what we have so far. Any suggestions for improvement would be 150% appreciated! Thanks!!!

---------------- Latin Table ------------------
Tortilla Cups filled with Shrimp Ceviche
Chips & Salsas
??? Some type of little rolled tortilla filled thing ???

----------- American/Burger Table --------------
Mini Chicken Kabobs on 6" Bamboo Skews
Sliders with Varioud "Gourmet" Toppings
??? Do we need some kind of side dish here ???

------------ Pasta/Salad Table ----------------
Cold Pasta Salad Bar w/ dressings and variety of toppings (in Martini glasses)
????? Lettuce Based Salad Also Need? ?????

------------- Veggie & Fruit Table ---------------
Veggies with a couple different tips
Fresh Fruits

***Plus a variety of desserts***
