Just pulled this out of a magazine today, looks fantastic for the colder months as Australia is currently experiencing. I'm looking forward to trying it.
Lamb's Wool
6 apples
2L good English ale
40ml raisins
1/2 tsp nutmeg
1/2 tsp ground ginger
120g sugar
Preheat oven to 180'C.
Cook apples in baking dish (by themselves) until tender. Allow to cool, then cut in half and remove the core. Mash really well with a potato masher.
Place the apples, ale, raisins, spices and sugar in a saucepan and gently warm until the spices and sugar dissolve. Don't allow to boil. Serve in warmed glasses.
Serves 8.
