What to do with ground beef

My MIL brought home a recipe from a church pot luck that became a favorite at her house when my wife was a young teen (I think). Know one knew what to call it, so the kids dubbed it - Ralph:LOL:. It's really a very nice pilaf/rice caserole that tastes amazing. It was originally baked in a casserole dish, but I modified it for cooking in a pot on the stove top.

Ralph, or Rice Pilaf with Ground Beef
Ingredients:
1 lb. Ground beef
1 cup uncooked, long grain rice
3 cups water
1 Pkg Lipton's Chicken Noodle Soup w/chicken
1 stalk celery
1 yellow onion
1/2 tsp. ground Thyme

Place the ground beef into a hot frying pan and brown. Break the meat up into small chunks.

While the meat is browning, wash and slice the celery, and dice the onion. Place a tbs or so of cooking oil, or butter into a 3 quart sauce pan. Heat and add the onion and celery. Saute' for a minute. Add the the remaining ingredients, including the browned ground beef into the pot, stir, and cover. Bring the mixture to a boil, then turn the heat down to a low simmer. Cover and simmer for 45 minutes. Serve with butter and a side veggie.
