Can I substitute instant milk for regular milk in pastry cream recipe?
I found a recipe on allrecipes.com to make pastry cream because I wanted to finish some milk I have that will expire soon. We don't usually drink fresh milk at home because we prefer soy milk. So, if I buy milk for baking, the rest may end up going to waste... :(

So, I really like the pastry cream that I made, and I want to make some more. But I have used up all the milk. Can I substitute instant milk for regular milk? We keep powder milk at home because I use it to make bread.

Here's the recipe:
  • 2 cups milk
  • 1/2 cup white sugar
  • 1 vanilla bean, halved lengthwise
  • 6 egg yolks
  • 4 tablespoons all-purpose flour
  • 4 tablespoons unsalted butter
  • 1 pinch salt
I should be able to make milk from the powder, and use that instead, right?

It should work fine.

Instant milk is usually skim isn't it? There's enough other fat in the recipe that that shouldn't make a difference.

You can also make your pastry cream with soy milk. It works just like milk. I use it all the time.
