Chicken Under A Brick
Easy and very crispy.
I use poussins (very sm about 1 1/2lbs ea)
Serves 1 per person
Butterfly chicken..bk bone out
Marinate in olive oil, crushed garlic and rosemary (or seasonings of your choice)
Heat up grill pan until very hot
Wrap 2 bricks (1 for ea) in tin foil
Sprinkle chicken w/kosher salt and pepper
Place skin side dwn
Cover w/brick
Cook approx 12 min
Turn and do same on other side.
Can serve as is or I have made a lemon sauce to go over
Mix 1 squeezed lemon, zest, garlic and olive oil...bring to boil..can serve hot or room temp.
