Part Cooked Guinea Fowl

Yesterday I bought a fresh guinea fowl, and put it into the oven to roast. Knowing the breast would be dry by the time the legs were cooked, I took the fowl out, and cut off the breasts to eat. The legs were only partly cooked so I put them in the fridge along with the rest of the carcass for today.

Will these legs be safe to cook again and eat? (keeping in mind they were only half cooked yesterday) This time cooking all the way through obviously.

Personally, I would have covered the breast with fat bacon to prevent the problem. You could also roast the bird upside down. You could also left the bird to carry on roasting once the breasts are removed.

The problem with a part cooked meat is that the uncooked juices would have spread throughout. I don't think I would cook and eat them.
 
There are lots of reliable sites to buy meat, and other hard to find items on the internet these days. I tend to rely on D'Artagnan for meat items I can't find (or am too lazy to search out on foot!)
