I use softened butter on outsides of both slices . If I am making an Italian panini, I use Olive oil instead of butter.

Taylor Ham comes in Mild and Tangy both are in red boxes if you buy it by the slices. There are other brands as well . Tangy is a little spicier.

I like a half and half mix of evoo and butter so they equal out cholesterol wise.

One little trick, with a french roll put the outside in and the inside out brush with evoo or butter then put in you press with meats and cheese the outside that tends to be a bit hard witll soften and you have a little bit of a different pannini.
