I knew a lady in Post Falls Idaho who made sourdough pancakes that she raved about. She basically made a biga of sourdough and cooked it up as pancakes. They were so sour as to be nearly inedible.
My advise is to make your sourdough biga, and add it to a standard pancake batter, sans baking soda, or baking powder. Let it rest for ten minutes to allow the yeast to get working. Then make a test pancake and see if the flavor is right. Adjust as required.
If you want it, I can post my from scratch pancake recipe. Most everyone who has used it loves it.
For the standard batter to be mixed with sourdough, try this:
1 cup all-purpose flour
1/2 tsp salt
3 tbs. sugar
1 large egg
3 tbs. cooking oil
3/4 cup milk
1/2 cup sourdough biga
Whisk together the oil and egg. Whisk in the milk. Add the remaining ingredients and whisk together. Fold in 1/2 cup of the sourdough biga.
Let rest for 10 minutes. Cook and serve with honey, and cheddar cheese. bacon or sausage on the side wouldn't hurt either.
