Clarifying Butter

Joe we have the same milk man (Mr Bellis) we had when we were kids ( his son delivers now) the milk is still delivered in bottles, I have just measured the amount of "top of the milk" or thin cream that floats to the top. I am anal enough to measure it in the summer and report back.
Ps there are two things that originate on the island of Jersy that cannot be reproduce by European Law Jersy milk, cream, and the beast new potato in the world the Jersy Royal. The milk is also luscious.

Yes, it sure is. I am a fan of brown butter. It's just not part of the clarifying process.
