Lactose Intolerance - Coursework Help

Hello, I am currently in year twelve studying food technology, so it would be helpful if you could fill this in to aid my coursework.

Questionnaire


Do you suffer from lactose intolerance?


If no do you eat soya or other dairy alternatives for part of another diet?


Do you suffer from any other food intolerance?


Do you feel there are enough free from products?


Do you find the packaging on non free from products understandable and easy to find the relevant information?

NO

NO - that stuff is nasty (taste/texture) IMHO

Do you suffer from any other food intolerance?
Only minimal sensitivities to excesses ....

Do you feel there are enough free from products?
YES, for me ... but perhaps not for those who have a need to some specific "free" product.

Do you find the packaging on non free from products understandable and easy to find the relevant information?
It depends on what you mean.

Have you tried any dairy free cheese?
YES

If yes how did you like it?
I HURLED!

If no would you be prepared to try it?
NOT AGAIN!

How much would you be prepared to pay?
Less than for "soylent green" wafers.

No.

No, not for another diet but rather becasue I like soy.

Yes, if not too many. Too many because people forget what the real thing tastes like or use the fake stuff as an excuse to eat more.

Yes, I assume it would be even easier to understand if you were intollerant and knew what to look for.

Have you tried any dairy free cheese?
Yes. If you're talking simple cheeses (like cheddar or jack cheese) then the flavour is okay but the texture is a bit off. Not bad when it's by itself of cooked in something where the cheese isn't the main part of the dish.

If yes how did you like it?
Is was okay but not as good in texture and had different melting consistancies than milk based cheese.

If no would you be prepared to try it?
n.a.

How much would you be prepared to pay?
It would have to cost less than regular cheese for me to consider buying again.

For what I've looked for, yes, so far.

I like root canals better

Never again

I wouldn't take it if it was free

I'm afraid as I don't buy these items, I'm not well versed on this matter, so I don't know.

Again, I can't remember the last time I read a packet, so can't give a valid answer.

No

Yes

Not a huge amount, given my budget and what I've heard about it.

Not a lot without sampling. After sampling, no more than normal cheese if meant to replace standard cheddar, etc. A bit more if used as a "special occasion" cheese.

I did for 12 years. Then I did Stanley Burrough's Master Cleanse (fast) & can now eat all dairy & lactose.

If no do you eat soya or other dairy alternatives for part of another diet?
Yes

Do you suffer from any other food intolerance?
MSG makes me very sick within 30 minutes, cramping, chills, diarrhea

Do you feel there are enough free from products?
Free from lactose? It has definitely gotten better. When I was diagnosed at 20, my doctors told me to only eat fresh fruits, fresh vegetables & fresh meats. Now you go to Whole Foods & have they lots of products that are lacose free...many being convenience foods.

Have you tried any dairy free cheese?
Yes, most of them.


If yes how did you like it?
The parmesan was my favorite. Some of the others tasted rubbery & melted funny.

They were pricey when I was eating them. But when you really miss something, you're willing to pay a little more.

no but i do not eat foods that contain lactose

nuts, eggs, shellfish,wheat

Do you feel there are enough free from products?
no, the free from products are good for one allergy but they don't cover multiple allergies well

Do you find the packaging on non free from products understandable and easy to find the relevant information?
yes, particularly when it is highlighted

Have you tried any dairy free cheese?
no, but some people have told me that it tastes descusting
If yes how did you like it?


If no would you be prepared to try it?

yes
How much would you be prepared to pay?
not very much before trying it

I live in WI, America's Dairyland, I'm a cheese head. They kick you out of state for that. If you suffer, at least suffer silently.
