Hi There!
I need to fix a lot of potatoes for a dinner tomorrow and was thinking I'd make Roasted Garlic Mashed Potoatoes..... Does anyone have a yummy recipie for these?

It's pretty basic - just roast some garlic and add to your regular mashed potatoes. You can also add a bit of goat cheese for a nice flavor and even an egg yolk and ricotta for some richness.

instead of roasting mine I put them into several cups of cream, bring it to a boil then simmer til the garlic are soft enough to mash with a fork. I then just add them to the potatoes along with some of the cream, and lots of butter til I get the consistency I like. Since I'm usually cooking for from 8-12 I use about 20 cloves of garlic,1-2 cups heavy cream and 1 large potato per person.
