With or without ground meat ? Oh yes, I see you have beef and mushrooms --- cool ... very tasty.
*** Do you have rice ? Onion ? Garlic ? a tomato ? -- see the ideas below and add evoo to a skillet and sauté the onion, garlic, tomato and prepare the rice, cooking until tender yet firm --- You are going to prepare a stuffing !

I have used green bell and red bell ... or golden yellow bell as well ...
Lemon prepared Rice long grain ( a slice of lemon zest in the boiling water )

Tomato
Garlic to taste
spring onion or scallion or shallots
Herbs
Spices ( for example: oregano, basil, parsley, dill or mint )
S & P
Ground pork or beef optional
Pecorino Sardo or Reggiano Parmesan Parmigiana Optional

fennel
Here is an Italian recipe for tri.color bell peps:
2 tblsps Evoo
3 or 4 bell peps - different colors
2 Scallions or 1 Spring Onion, 1 leek or shallots ( 2 )
basil
green pepper
red pepper
rice long grain
large shrimp sliced
garlic
tomato
lemon zest
dill, oregano, basil and parsley and mint ( a tsp or pinch of each )
