Help me find a side dish for this casserole

A lady at work is having surgery on Tuesday and we are all making meals for her family for the next couple weeks.

One lady is making a Mexican casserole with salsa, chicken, rice, cream of chicken soup and cheese, and I need to bring a side dish to compliment it.

I was going to bring corn bread but only the mom likes it...

Any ideas?

You can add in what you like - cherry tomatoes, roasted corn, sliced black olives, thinly sliced red onion, roasted corn, herbed croutons (or taco chips), with a cilantro lime dressing.

I vote for a salad..... maybe with avocadoes and oranges in with the greens? and a few scallions.
