That sounds like a china cap.

I have never used one but it seems like it would be good for large amounts than the small ricer I have. plus many other things like the apple sauce you mentioned.

All this talk about ricing potatoes.

Has anyone tried potatoeing rice? I did and it looks like this:

I potatoed the rice. it's the opposite of ricing potatoes.
