Grill-baked Apple Walnut Cobbler


Cobbler:
8 Large Granny Smith apples, peeled & sliced
3/4 C Sugar
1/2 C Walnuts
2 TBL Tapioca flour
2 TSP Brandy
1 TSP Cinnamon
1 TSP Pure vanilla extract
1 TSP Fresh-squeezed lemon juice
1 TSP Lemon zest
1/2 TSP Nutmeg
PINCH Salt
Topping:
2/3 C Sugar
1/2 C Brown sugar
2/3 C Flour
2 TSP Cinnamon
2 STICKS Cold butter


1. Combine cobbler ingredients in a large bowl. Grease a large, heavy iron frying pan or Dutch oven and fill with the mixture.
2. For topping, combine sugars, flour and cinnamon in food processor. Cut in butter until mixture is crumbly.
3. Sprinkle topping over cobbler. Bake at 400° for about 45 minutes.
4. Serve hot.
5. Serves 8-10.
