Honey was a great cook and baker and a dear friend of my mom's. May she rest in peace. She loved to put chocolate chips in everything. lol

Honey Shankman's Tropic S'Prizes
Ingredients:
2 cups flour
1/3 cup sugar
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 cup butter
1 unbeaten egg
1-2 Tbsp milk
1/2 tsp vanilla

Filling:
3/4 cup pineapple preserves
3/4 cup chopped nuts
3/4 cup semisweet chocolate chips

powdered sugar for serving.

Directions:
Sift together flour, sugar, baking powder, soda and salt. Add butter. Blend in egg, milk and vanilla. Mix well and form a ball of dough. Chill if desired for easier handling. Divide dough into 3 parts. Roll out one part on floured surface to a 12 x 4 inch rectangle. Sprinkle with:

1/4 cup pineapple preserves
1/4 cup chopped nuts
1/4 cup semisweet chocolate chips

Roll rightly as for jelly roll, starting with the 12 inch side; seal edges and ends. Place seam side down on greased baking sheet. Repeat with remaining dough and filling. Bake in hot oven, 400 degrees for 15 to 17 minutes. Cool and slice into 3/4 inch pieces. Sprinkle with powdered sugar.
