Apple Sauce Spice Cake with Apple Cider Frosting

Prepare 2 9 inch cake pans. Preheat oven to 350 degrees.

In a medium bowl beat 3 eggs. Add 1 3/4 cups packed Brown Sugar and 1 cup Canola oil and 2 cups Apple Sauce. Blend well. Set aside.

In a large bowl sift together: 3 1/2 cups flour, 3/4 t salt, 2 t Baking Soda, 2 T cinnamon
1/2 t allspice, 1/2 cloves, 1/2 t nutmeg, 1/2 t ginger, 1/2 t white pepper and 1/2 t cardamom. Make a well in the dry ingredients. Pour the wet in the well and mix until blended.

Bake about 20 minutes. Check often as this depends on your oven.

Apple Cider Frosting

1 cup softened Butter
1/2 cup Apple Cider
8 cups Powdered Sugar ( icing sugar)

Beat the Butter and Apple Cider until combined. Add the Powdered sugar 1 cup at at time until all is incorporated and frosting is fluffy.

One of the few things I actually bake is every few years an apple spice cake. I'm not big on frosting, so usually don't bother, serving it with whipped or ice cream instead. But I like the idea of apple cider icing. Since I only make it every year or three (although a friend recently discovered I make it and has an apple tree ....) will I remember this? Butter, sugar, cider. Shouldn't be THAT hard to remember!
