ISO Carrot Cake recipe

I have some very large carrotts that I pulled out my garden, and thought I could use some of them in a carrott cake. Anyone have a recipe they would like to share?
 
I do

Carrot And Pineapple cake. ( TNT)

1 1/4 cup veggie oil
1 tsp baking soda
1 tsp cinnamon ( I use a little more)
4 eggs
1 tsp vanilla ( I use a little more)
1 cup crushed pineapple,drained
2 cups sugar
2 cups flour
1 tsp baking powder
1/2 tsp salt
2 cups grated carrots
1 cup nuts

Mix sugar, oil and eggs until nice and creamy.
Add all dry ingreds. Mix well.
Add carrots and pineapple and nuts.
Gently mix all together.
Pour into a 9x13 pan
bake for 35 min. 350

Frosting
1 box powdered sugar
1 cup butter
1 3oz package of cream cheese
1 tsp vanilla

blend and beat until smooth, spread on cake.

Hubby will be getting this for his birthday next week. It's on of his faves. :chef:

1 cup brown sugar
1 cup raisins
4 eggs
1 1/2 cups white sugar
1 cup vegetable oil
2 teaspoons vanilla extract

3 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon salt
4 teaspoons ground cinnamon
1 cup chopped walnuts

Directions
1 In a medium bowl, combine grated carrots and brown
sugar. Set aside for 60 minutes, then stir in raisins.
2 Preheat oven to 350 degrees F (175 degrees C). Grease
and flour two 10 inch cake pans.
3 In a large bowl, beat eggs until light. Gradually beat
in the white sugar, oil and vanilla. Stir in the
pineapple. Combine the flour, baking soda, salt and cinnamon,
stir into the wet mixture until absorbed. Finally stir in
the carrot mixture and the walnuts. Pour evenly into the
prepared pans.
4 Bake for 45 to 50 minutes in the preheated oven, until
cake tests done with a toothpick. Cool for 10 minutes
before removing from pan. When completely cooled, frost with cream cheese frosting.
 
Yours sounds good too.. I'd make it for Paul but
I'm sure he'd say, "This is really good... but, why didn't
you use mom's recipe?"
 
I've never heard of adding pineapple to carrott cake. What a nice twist! I'm making the carrott cake for my hubby too pdswife, he loves it. Thanks for the recipes.
 
CARROT CAKE



BEAT 2 CUPS SUGAR WITH 1 1/2 CUPS VEGETABLE OIL

ADD 4 EGGS BEATING WELL



SIFT 2 CUPS FLOUR WITH

2 TEASPOONS CINNAMON

2 TEASPOONS SODA AND

2 TEASPOONS SALT



ADD TO FIRST MIXTURE



FOLD IN 3 CUPS GRATED CARROT AND 1/2 CUPS PECANS

ADD 1 CUP RAISINS IF DESIRED



POUR INTO A 13X9X2 PAN (I use a cooky sheet because I prefer the sheet cake type)



BAKE ABOUT 60 MINUTES AT 300



Here's mine without the pineapple...but the pineapple does sound delicious!

It gives it an extra moistness and makes it
a little sweeter. Yummmmy!
