This is another one of those little old lady recipes that takes forever to bake a batch. Last time I made these, I started early in the morning and I was still baking into the night. But, oh, are they worth it!

Elsie Wyman's Cinnamon Crisps
(Mrs. Apple use to make these, too. May these two great bakers rest in peace)

Ingredients:
1 cup sugar
3 eggs
3/4 cup oil
1 teaspoon vanilla
4-5 cups flour
1/2 teaspoon baking soda
2-1/2 teaspoons baking powder
1/2 teaspoon salt
sugar and cinnamon

Directions:
Preheat oven to 325 degrees Farenheit. Cream the eggs until lemon colored; gradually add the sugar, oil and vanilla. Sift the dry ingredients together (not including the sugar and cinnamon at the end) and add to the egg mixture, blending well. Line the oven racks with aluminum foil, allowing 2-inches around the edges of the racks to allow heat to circulate. Roll out the dough, in parts, to about 1/4-inch thick. Sprinkle dough with cinnamon and sugar. Cut cookies by making 2 x 3-inch strips. Place on oven rack, press each cookie into groove of rach with fingers. Bake at 325 degrees for 15 minutes. Bake one rack at a time. Remove the cookies from racks onto cooling racks. Watch them and remove them as they start to very lightly brown.
