Yes. I have made pignoli for a friend but I believe it was Nick Malgieri's recipe. It is similar to the PD version.

For 60 cookies
1/2 cup sugar
8 oz whole blanched almonds
3 large egg whites
1 cup pine nuts for topping

I have a serious problem here, every time I read your posts my blood sugar jumps about 30 points!!! LOL other than that sounds good!

I made them today. Wow are they delicious. I have to hide them from myself! I used a simple recipe.

7oz. almond paste
2 egg whites
1/2 cup sugar
pignoli nuts.
