I too do my pot roast on top of the stove. I think you have better control over it. And I have a glass cover for my pot so I can see what it is doing. I do put my veggies in during the last 45 minutes. Turnip and carrots go in first. Potaotes last. I also add a packet of onion soup mix to mine. It gives the gravy a great flavor along with the fond from browning the meat.
