2 beaten eggs
1/2 c. tomato juice
1/4 c. soft bread crumbs
2 Tlb. parsley
1/2 tsp. oregano
1 tsp, salt
1/4 tsp. pepper
1 clove garlic, minced
2 lbs ground beef
4 to 6 oz.thinly sliced ham
1 ( 6 oz ) pk sliced mozzarella cheese.
In a bowl combine the eggs and tomato juic; stir in the bread crumbs, parsley, oregano, salt and garlic. Add ground beef, mix. On waxed paper, pat meat to a 10x8 inch rectangle. Arrange ham slices on top of meat, leaving a sm margin around edges. Reserve 1 slice of cheese. Tear up remaining cheese, sprinkle over ham. Roll up meat, place seam side down in a 13x9 x2 inch pan. Bake at 350 for 1 and 1/4 hrs, Cut reserved cheese slice into 4 triangles, overlap on top of meat and return to oven until melted., about 2 min.

Yes, it DOES sound good! Maybe a package of thawed chopped spinach, squeezed dry, in there, too.

mmmm I just made it! The pictures don't do the flavor justice, but for my first time, not bad. The roll broke open at the top, but I just covered it with more shredded mozzarella (which I used in the stuffing, too.)

I definitely have to work on the rolling technique (I used a silipat) and the presentation.

Great recipe, thumper! It is delicious!
