saw this in our local sun paper. thought it sounded good.
1/4 cup frozen apple juice concentrate, thawed
2 tbsp. fresh parley, chopped
2 tbsp. finely shredded apple
3 tbsp. sour cream
3 tbsp. water
2 tbsp. cider vinegar
1 tbsp. dijon mustard
1/4 tsp. salt
1/8 tsp. black pepper
mix together all the ingredients whisking well. chill until ready to serve over salad.
makes about 1 cup
