ISO a Green Peppercorn sauce for filet mignon

Hey all!

I am looking for a T&T recipe for a green peppercorn sauce to serve with some gorgeous filets I picked up.

Anyone want to share a great recipe?

I cook steaks to the desired finish, rare, medium etc... then remove the steaks from the pan. I then add enough double cream or creme fraiche to make the amount of sauce I require for however many steaks I've cooked, along with a handful of crushed green (or black for black peppercorn sauce) peppercorns and cook until the sauce is warmed through.
 
And yet another to choose from!

MUSTARD AND GREEN PEPPERCORN SAUCE
3T chopped shallots
2/3 cup chicken broth
1 ½ T brandy
2T whole grain Dijon
1tsp. green peppercorns in brine
2T heavy cream

Heat skillet to medium heat; add 1T butter, and saute shallots and peppercorns til soft, about 2 minutes. Add broth, mustard, and cream, then brandy. Boil til sauce thickens enough to coat spoon, about 7 minutes. Season with salt/pepper.
