I have lots of Wing recipes. Here's one I got from "Thrill of the Grill". The skin may not be as crisp as you want it. This WILL dissappear FAST!
Grilled Basque Wings
Yields: 40 pieces
3 large garlic cloves, chopped
½ c lemon juice
2 T virgin olive oil
5 – 15 dashes Tabasco
3 T chopped fresh herbs or your choice, whatever you like
20 chicken wings
salt and pepper to taste
In a large serving bowl, mix together all the ingredients except the wings. Using a sharp, thin, knife, cut through both joints of the wings. Throw the wingtip into a ziplock baggie and freeze, use it for stock. Salt and pepper the wing pieces to taste and grill them on a medium hot grill, until golden brown, about 5 minutes. When the wings are cooked, place in the bowl with the marinade, and toss to coat evenly. Place on a platter and watch them disappear.
Here's another one, but I haven't tried this one.
Tequila Chicken Wings
4 # chicken wings
½ c tequila
½ c lemon
-or- lime juice
4 T chili powder
1 t cayenne pepper
1 t salt
½ T fresh ground pepper
1 c cooking oil
Combine all ingredients together and add wings. Refrigerate overnight.
Cook on the grill for about 15 – 20 minutes, basting occasionally. Serve with your favorite salsa or cheese dip.
