Salmon Pasta Finale

This is the final version of a Salmon Pasta recipe I posted about. It came out so well I thought I would share in case anyone is interested. The bacon and salmon worked well together. the mini penne was the perfect pasta for this too.


1 large tomato diced small
1 clove garlic minced
3 tbs fine dice onion
3 green onions sliced
1 sprig fresh tnyme leaves
3 slices good bacon chopped and cooked
3 teaspoons capers
1/2 cup butter
2 tbs lemon juice
1/2 cup pecorino cheese crumbled
1 1/2 cups grilled salmon flaked
1/2 tsp chili flakes
1 lb mezze penne pasta cooked as directed

Combine all ingredients and toss well. Serve warm.
An Arugula salad would have gone nicely with this. Next Time!

Thanks for posting.

The only concern I would have is the MAR Y MONTAÑA combination, of fish and meat, especially bacon ... Is this overpowering or distracting from the Salmon ?

The Penne Rigate would work nice here too ...
