Ok, strawberry season's almost on us - here's one to start off the season - scrumptious!

Strawberry Tart with Almond cream

Crust:

1 ½ cups flour
¼ c confectioners sugar
½ tsp baking powder
1 egg
8 T cold butter
In a medium bowl, combine the flour, sugar and baking powser. Mix well. Cut the butter in with a pastry cutter. Add egg andm ix til the dough forms a ball.

On a lightly floured board, roll out dough to 1/8 in thick. Fit dough into a 9 ½ inch fluted tart pan. Prick the bottom and chilld for at least 30 minutes.

Almond cream filling:

8T soft butter
½ c. slivered almonds finely ground
1/3 c sugar
¼ cup flour
1 egg

Combine all ingredients and beat til smooth. Spread out on bottom of tart pan; bake at 350 for about 30 mnutes, til crust is golden and filling lightly browned. Cool.

To Serve:

Spread a thin layer of strawberry jam over the almond cream.

Clean and half about 4 cups of strawberries. Starting with the outside edge, arrange strawberries, cut side down. Sprinkle with confectioner sugar or glaze with melted jam.
