My favorite casserole...


My favorite casserole is my TUNA-NOODLE CASSEROLE. My BEEF AND EGGPLANT CASSEROLE comes in a close second.:chef:
 
i make what my grandkids call "grandma chicken casserole so i guess it is my favorite.i do however get tired of making it so much. each one wants it for their bday dinner.
 
Tamales from a real factory with chili and cheese and chiles baked only until heated thru and then served with all the fixings............sour cream, guacamole, onions, etc...........gosh, I'm only three days away from my roots............yeehaw.....TX here I come.........

awww---that's sweet......I made a chicken dinner pie for a friend's hubby and 4 children who had to go home as her father was very ill.......when she returned she called and asked for the recipe which was quite simple but she said that they wouldn't eat hers but loved mine........she said thereafter on their birthdays she had to make the chicken dinner pie at their requests.......

what is recipe for eggplant and beef? Something like Moussaka? My family loves things with eggplant. This has got me curious since you said was a favorite. Is it recipe from this site or just something you made up on your own?

Beef & eggplant casserole


BEEF & EGGPLANT CASSEROLE

Ingredients:
1 eggplant, unpeeled, sliced into 1/4" slices
extra-virgin olive oil
3 Tbsp canola oil
1 cup chopped onion
1.5 lbs. lean ground beef
2 cups Mozzarella cheese, shredded
2 cans tomato sauce (8 oz cans)
2 tsp Italian seasoning, crushed
salt & pepper to taste

Preheat oven to 425.

Line a baking tray with parchment paper. Place eggplant slices on baking tray and brush with olive oil.

Bake eggplant slices for 15 minutes. Remove from oven and set aside.

Reduce oven to 350.

In a large skillet, cook onions over MED heat for about 4 minutes. Add ground beef and cook about 5 minutes.
Season with salt & pepper.

Drain off any fat. Add tomato sauce and Italian seasoning. Stir.

Layer half the eggplant in greased 3 qt. casserole dish. Spread half of the meat mixture over eggplant. Sprinkle one cup of Mozzarella on top.

Repeat layers.

Bake casserole, uncovered, for 35 minutes.
 
Viva La Chicken -

my mother in law made this in the 60's it was the first casserole I ever made besides tuna casserole and my family still asks for it:

4 whole Chicken breasts - cooked
1 dozen corn tortillas cut in strips
1 can cream of mushroom soup
1 can cream of chicken soup
1 onion grated
1 cup grated onion (minced)
1 can green chili sauce
1 cup milk
1 llb grated cheese
chicken stock -

Wrap chicken in foil and bake at 400 degrees 1 hour. When cool, bone, skin and cut into large pieces. Cut tortillas into 1 inch strips. Mix soups, milk, onion and salsa. Grease 9 by 13 pan place 2 T broth in bottom. Layer of tortillas next layer of chicken then soup mixture repeat layers ending with soup. Top with cheese. Bake at 300 for 1 1/2 hours.

Is the one you're talking about made with the pie crusts?? I've made that one numerous times and everyone loves it! I've got the Betty Crocker circa 1969 and my grandmothers' I believe is the very first one. I still use alot of the recipes in there.

yep, the very one, homecook.............today that cookbook in good condition (mine is held together by tape and rubberbands) is worth about $100 and that's for a paperback.....they are very rare to find these days and yet it had some of the best recipes ever......it really opened the world of cooking to me........

thank you for such quick response. Now if only I can fix it as fast. I am anxious to find out what it tastes like so I can let you know. good thing you like eggplant.. Sure helps me out a lot. Sounds wonderful.

Mine isn't in too bad of shape. It's all in one piece. I use it alot.There are alot of great recipes. My mother bought it for me when I first got married 35 years ago. The one I have from my grandmother has the back spine missing but the pages are still intact. The recipes are really something the way they are laid out. I bought one for my dd when she got married 8 yrs. ago.

Thanks kitchenelf, I feel like I always am the only one pestering for recipes. One thing for sure, when I do ask, t hey respond. What a reward! Receiving recipe someone else tested. The real work is done, all I have to do is put it together. Appreciate everyone who gives me the recipes I request. Let's see if you get the same results. I'll be watching!
 
One of my faves is Scalloped Cabbage casserole and I have a hamburger stuffing recipe that is a favorite of family. Both of these recipes I've posted here on other threads.

Tamale Bake

1- 1/2 # ground Beef
1 C. chopped onion
1 clove minced garlic
1/2 C. green pepper (opt.if you use stewed tomatoes)
2 cans tomatoes (I use stewed tomatoes)
I can while kernel corn 1# size ( I use one can of Green Giant )
1 Tablespoon salt
1 1/2 Tablespoon Chili powder
1/4 Teaspoon pepper
1/2 C. corn yellow corn meal
1 C. water (cold)
1 C. whole or pitted olives (I don't use..)

Add beef, add onions, garlic green pepper.cook and stir until veg. are wilted.
Stir in tomatoes, corn and seasonings. Simmer 5 minutes.
Mix corn meal with water. Stir into mixture.
Cover and cook over low heat about 10 minutes. Stir in Olives.
Pour into 2 Qt. baking dish. Cover with cornmeal topping.
Cornmeal Topping
Heat
1 1/2 C. milk
1 Teaspoon salt
2 Tablespoons butter

add slowly 1/2 C. yellow cornmeal, stiring until thick. ( over med. low heat)
Remove from heat and stir in ,
1 C. grated chedder cheese and add in 2 eggs lightly beaten
Bake in 350* oven for about 20 minutes.

Or should another thread be started and called "Favorite Casseroles" and the recipes above be transfered to it???
