100g long-white rice
a pinch of salt
600ml milk
100g granulated sugar
200g plain chocolate, chopped
70g butter, diced
1 tsp vanilla essence
2 tbsp brandy or Cognac
175 ml double cream
Cook the rice, until it is just tender, drain the rice, rinse and drain again
Heat the milk and sugar,until the sugar dissolve, add the chocolate and butter and stir until melted and smooth
Stir in the cooked rice and reduce the heat to low
Cover and simmer, stirring often, for 20 minutes, or until the milk is absorbed, add the vanilla essence and brandy
Remove from the heat and cool
Whip the cream until soft peaks, first mix a spoonful of cream with a wooden spoon into the rice, then add the rest of the cream
Chill for about 2 hours before serving, and serve with whipped cream
