Assistant Cook
2 cups sugar
3/4 cup evaporated milk
1 and 1/2 cup peanut butter
Add everything in a heavy pan. (we always used a cast iron skillet) Bring to boil on medium heat. Siring frequently to keep from scorching. Cook to soft ball stage. (when a small amount of mixture forms a soft ball in cold water) Remove from heat. When mixture stops bubbling, mix well. The color will dull slightly and the mixture will start to get firm. Pour into a buttered 8 inch pan.
My Grandmother made the best ever peanut butter fudge. Simple and delicious! She taught me how when I was about 10 years old. She taught me how to watch the bubbles as it boiled so I would know when to test it, and to watch the mixture change color and texture as I mixed it before putting it into the buttered pan. It was fudge by recipe and by sight, and special time with my grandmother.
