These cupcakes make for a quick and easy grab and go snack.

LEMON ANGEL FOOD CUP CAKES

1 box(es) (16 ounce) ANGEL FOOD CAKE MIX; I Use The Two Step.
1 cup(s) WATER; Plus 2 Tablespoons.
3 tablespoon(s) LEMON JUICE

In a mixing bowl; beat cake mix, water and lemon juice according to package directions.
Pour batter evenly into lined muffin tins.
The tins should be almost full and rounded (A good heaping 1/4 cup).
Bake at 375 degrees for 12 to 15 minutes or until golden brown.
The tops will spring back when lightly touched.
Immediately remove cup cakes from pan and let cool on a wire rack.

Drizzle with a lemon icing or just eat plain.
Makes 12 cupcakes.
