It's a tight grocery week and we're trying to clean out the fridge before shopping again , but this time it worked to our advantage!
I thickly sliced garden tomatoes and topped with slices of avocado and red onion (this I did very thin), and sprinkled it with fresh lemon juice, evoo, coarse salt and freshly cracked black pepper. Garnished with a little fresh parsley
