Last time we had moussaka, Karen made an extra pan to freeze along with some of the spicy tomato sauce. We are having that tonight. Just have to make fresh tzatziki.
We had our first frost last night, so I harvested some eggplant that would have otherwise gotten a little bigger. I will be fixing eggplant parmesan for dinner.
The weather is cooling down here in the desert, thankfully. This evening's dinner was a plate of comfort food - a couple of slices of leftover meatloaf, mashed red 'taters, and steamed carrots.
