I have copied some great recipes from this website, and thought it was time for me to share one of my favorite recipes...
Sweet Potatoe Casserole
3 cups sweet potatoe, mashed
1 cup sugar
1/2 cup butter, melted
1/2 cup milk
1 tsp. vanilla
2 eggs
1/2 tsp. pumpkin pie spice
1 cup light brown sugar
1/2 cup flour
1/2 cup butter, unmelted
1 cup pecans, chopped
Peel sweet potatoes, cut and boil until tender, and mash. Mix with sugar, melted butter, milk, vanilla, eggs, and pumpkin pie spice.
Topping: Mix brown sugar, flour, unmelted butter, and nuts until crumbly. Sprinkle on top of sweet potato mixture.
Bake 30-40 minutes at 350 degrees until set and brown.
My mother taught me how to make this, and it is a hit *everywhere* I take it. Everyone always asks for the recipe. So I thought i'd share it with all of you nice people.
