This is one of Kiersten's favorite dishes -
Tex-Mex Pasta Bake
1 9 oz. pkg frozen creamed spinach ,defrosted
1 pkg. 80z, cream cheese, softened
1 (16oz.) penne pasta cooked according to directions on pkg.
1 (16oz.) jar salsa
1 lb. ground beef, cooked,drained and crumbled*
1 (14.5oz) can tomato sauce
1 tablespoon chili powder
2 cups shredded mexican blend cheeses
Preheat oven 400
Combine spinach and cream cheese in medium bowl. Combine pasta, salsa, beef and tomato sauce and chili powder in a large bowl.Spoon half the pasta mixture into a 13x9 baking dish; top with spinach mixture.Top with remaining pasta mixture; Cover and bake 30 minutes.
Uncover and top with cheese and bake an additional 10 minutes or until bubbly.
Makes about 8 servings
*Kiersten is a vegetarian so I substitute defrosted Morning Star crumbles when I make this for her.It works well.
