Thanks! Great things, smoked pork chops. They can sit in your fridge for a few weeks in shrink wrap. Whenever you don't have any better ideas, there they are. Just waiting to be fried and gobbled up.....yummy, too....Nice save, Roch. Looks good!
That seems likely, even though we have had the great food a Sundays before.Usually, the main/good cooks have Sunday's and Monday's off because they are typically the slower evenings in restaurants... you may have gotten the less experienced kitchen staff....
Yeah. Restaurants can be funny things. Employees come and go. Kitchens are only as good as the weakest link, I always say. Even if you have some weak employees, at some point you have to let them work alone. You can't be there 24/7. Over the years I have dreaded days off in some kitchens because I would always come back to horror stories and complaints. But, I wasn't going to kill myself working 7 days a week. It's hit and miss in many establishments..even the good ones...That seems likely, even though we have had the great food a Sundays before.
