I am no expert but I don't really think you need a set. A chef's knife and a utility knife is really all you need when you think about it. Perhaps a cleaver if you are butchering meat at all. I have Globals and they are just great. I think the brand you choose is pretty much personal preference.

I made some chicken mulligatawny with jasmine rice. It was so yummy. I feel kind of embarrased when I can't stop eating my own food. Like it's being egotistic or something! lol It really did turn out beautifully though.
If I were you I would clean them up and then freeze them. I wouldn't want them to lose the fleshy part by drying them. I think that fleshy part of a jalapeno is the best!
Ah, I am from Red Lodge and lived there mostly. Short times in Billings and Bozeman during college. I love Montana but I feel kind of disconnected from the world when I go there now. I guess moving away did that to me!
You can definitely do a normal or even high carb diet and lose weight. If you burn more than you take in, it doesn't matter what kind of calories you take in.
I was raised vegetarian, so I had a hard time with meat (especially fish) for a long time. But now I love almost all kinds of meat. It has been a mind over matter thing for me...and then accepting that I LOVE meat in spite of my upbringing! lol
