Inspired by John's post I decided to try salsa verde chicken for the first time tonight.
Salsa fixins.
Charring up.
Chicken thighs rubbed with Penzy's Gelena Street rub and salsa after the blend.
Thighs getting some color.
Everything in the dutch oven and braising for an hour.
Plated with some Mexican rice and an orange salad.
Incredibly good. Thanks, John! A little spicier than I had wanted but great flavor. Next time, fewer jalapenos, more tomatillos, onion, garlic & cilantro...
