Last night was a SPRING SPECTACULAR dinner!!!! LIVE, yes LIVE Soft-Shell Crabs - still alive & kicking - that I cleaned myself, dredged in seasoned flour, & sauteed up in a 1/2 & 1/2 butter/extra-virgin olive mix, along with several large cloves of chopped garlic, Italian flat-leaf parsley, a splash of Pinot Grigio, & some fresh lemon juice.
Served with fresh buttered FIDDLEHEAD FERNS!!! And some shoestring potato fries (my favorite accompaniment to soft-shells.
Also enjoyed a lovely bottle of sparkling Ruffino Prosecco.
Ahhh - Spring has definitely sprung! :)
