I have not tried this recipe. I found it on the internet and thought that it looked like a great summer salad.
California Grilled Chicken Salad
Dressing and Marinade:
Cut chicken into thin strips. Toss lettuce with refrigerated dressing and add the remaining ingredients.

Dressing and Marinade:
- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- 1 tablespoon prepared mustard
- 1 clove garlic, minced
- 1 teaspoon shallots, chopped (optional)
- salt and pepper to taste
- 4 boneless, skinless chicken breasts
- 1 head romaine lettuce, washed and cut into small pieces
- 1 cup cherry tomatoes
- 1 cup calamata olives
- 1/4 pound cooked pancetta, drained and cut into small pieces
- 2 avocados, peeled and diced
- 1/4 cup crumbled blue cheese
