I do this one when I have BBQ parties because it holds well without refridgeration.

Cut corn from 6-7 ears (I prefer white corn)
1/2 med red onion small dice
1/2 cup chopped cilantro
1 grated carrot
1 cucumber peeled cored and fine dice
2 cups grape tomatoes halved
2 green onions chopped

For the dressing

1/4 cup of 1/2 olive1/2 salad oil
3-4 tbs rice wine vinegar
salt and pepper
1/2 shallot minced
1 tbs splenda or honey
