Vegan Egg Substitutes and Baking

Hi all.

I have a colleague at work who just became a vegan and was bemoaning the fact that she can no longer eat the cheese cake I make that she loves so much. I do have a recipe for a pistachio cake which is mostly vegan except for the four eggs in the recipe. I would like to know what vegan egg substitutes are available and what quantity I would use them in to replace those four eggs.

If your local supermarket doesn't carry it, your health food store certainly has non-dairy egg substitute specifically for vegans, and I believe it's a one-to-one ratio.
