Just made a quick dinner (for one + 1). Looked in the fridge and made it up as I went along. Ended up pretty good, on an electric hob.
Anyone know if this dish has a name?
2 chicken breasts
+
quarter brown onion (coarsely diced)
1 spring onion (just slice it up, have fun)
1 clove garlic (fine chopped)
1 mushroom (fine)
quarter red pepper (diced)
handful of green beans (chop up about 1 inch of them)
chopped tomatoes (small can of)
+
oregano, basil, dried red peppers
+
penne pasta (120 grams or so)

In griddle pan - medium heat:
Cook chicken in a little oil until ... colour of cooked salmon? it should NOT be breaking up , mix it up with some of the herbs before you begin (you can use dried stuff).
Now add the onion + the whiter half of spring onion + garlic
When onion is getting soft, chuck in the mushroom, pepper and the chopped up portion of the green beans.
After 3-4 mins add the tomatoes and the rest of your spring onion (I also added a little tomato puree at this point).
Drop the heat a notch and let the stuff be (give it a stir every couple of minutes)
Now's a good time to put the pasta in (assuming it takes 12 minutes).
When the pasta is done - let it drain.
Whilst its draining: a little oil and some herbs in the empty pan.
Throw in the green beans and use the same heat to do them for a minute or two (dep on taste).
Serve with a good German
Let me know if you can name it. Or if you've tried it and liked it. (i think it could do with a little more green beans)
