A tasty starter or supper dish.
4 large field or Portobello mushrooms
A little olive oil
Freshly ground salt and pepper, to taste
200g of mature or farmhouse cheddar cheese
1 tablespoon of English hot mustard
1 large egg, lightly beatetn
Few shakes of Worcester sauce
A good pinch of Cayenne pepper
Put the mushrooms on a baking sheet, drizzle with olive oil and season. Grill, turning, until just tender.
Mix together all the other ingredients. Fill the mushroom then grill (?is that broil) until golden and bubbling.
