A very interesting tip on using shrimp paste. For those of you who have cooked any Thai food dish, shrimp paste would be one ingredient that you most probably would have used. We recently came across one very interesting way to increase the depth of flavor in shrimp paste.

Before you jump in to follow this suggestion, remember to restrict the quantity of shrimp paste used to just what is mentioned on the recipe that you are preparing. Do not take the whole pack of shrimp paste from the refrigerator and start working with it.

The process is really quite simple, take the portion of shrimp paste that will be needed in your current recipe. Next, wrap it in an aluminium foil and place it under a heated grill. Leave it there for around 2 to 3 minutes, during this time turn it over around 2 to 3 times. Let the packet cool, take out the shrimp paste and use it in your recipe.

This process gives a more full and deep flavor to the shrimp paste. Try it out, it is something that we learnt after using shrimp paste for more than a decade.
